Ingredients for two servings

  • 150 g wheat flour 550
  • 130 g of fresh spinach

Vegan spinach pasta: step by step

  1. Place the flour and spinach in a food processor or blender and blend the two ingredients for a few minutes. If the dough is a bit sticky, don’t add too much flour, otherwise the pasta will be too dry.
  2. Then roll the dough into a ball and shape it into a disk (about 1.5 cm thick). Boil some water in a pot and add a little salt.
  3. Hold the disk over the boiling water, use kitchen scissors to cut pieces of dough about 1 cm long, and drop them directly into the boiling water.
  4. Let the noodles cook until they float to the surface. Ready-to-eat vegan spinach noodles, which you can serve with your choice of sauce or enjoy on their own.

Spinach pesto as an appetizer

Angelo recommends a spinach pesto that goes well with pasta, which you can imitate with the following ingredients:

  • 30 grams of walnuts
  • 2 cloves of garlic
  • 50 g parmesan
  • 200 g of fresh spinach
  • 50 ml of olive oil
  • 1 pinch of salt

For the pesto, all you have to do is put all the ingredients in a blender and blend them into a creamy paste.
