Ingredients for noodles:
Put the whole wheat flour and durum wheat semolina – except for a small amount of semolina – in a large bowl. Add eggs, olive oil, salt and water and mix with your fingers. If the dough becomes dough, start kneading and make a stiff dough. If the dough is too dry, add a tablespoon of water.
Divide the dough ball into pieces and fold them together. Make a soft dough in the pasta machine. To prevent possible sticking, sprinkle the rest of the durum wheat. Turn the dough on speed 6. Then make the spaghetti with a suitable surface. Put it in a pan with salted water and bring it to a boil. Cook the spaghetti for about 3 minutes.
Ingredients for the sauce:
Cut the bacon into thick slices and cook in a pan with a little olive oil, but do not let it become too thin. Grate the pecorino, reserving a small amount for sprinkling. In a large bowl, whisk together the eggs and the remaining cream.
Remove the pasta from the water with the spaghetti noodles and add to the pan with the bacon. Mix well, then add to the bowl with the egg mixture. Stir vigorously until the egg mixture binds to the noodles and forms a creamy sauce. Add a little more pasta water if needed.
Ingredients for serving:
Divide the pasta between plates and sprinkle with pepper and grated pecorino. If you like, sprinkle some chives on top.
