Many people associate Brussels sprouts with heavy German cuisine. As a meat supplement, it may be a little overcooked – and therefore not acceptable, very tasty vegetable, especially with children. But there are foods and preparation methods that get the most out of winter vegetables. Like these delicious noodles that are ready in less than half an hour!

Ingredients for delicious spaghetti with Brussels sprouts and parmesan

For 2 people, you need 300 grams of spaghetti, 250 grams of Brussels sprouts, 100 grams of Parmesan (or Pecorino Romano), 2 cloves of garlic, 8 sprigs of basil, olive oil, salt and pepper.

Recipe for delicious spaghetti with Brussels sprouts and parmesan

How it works: First, boil the pasta in plenty of salted water until almost al dente. Just before cooking the noodles, drain 2-3 tablespoons of the starchy pasta water and set aside.

Then you can take care of Brussels sprouts. Cut off the woody end of the pod and remove the dark outer leaves. Now wash the flowers under cold water and cut them into rings parallel to the stalk part.

Remove the basil leaves from their pods and place them in the pods. Mince the garlic and then fry it in a pan with a good amount of oil.

When it starts to colour, add the Brussels sprouts and half the basil. Season everything with salt and pepper and toss everything thoroughly. Then let the Brussels sprouts simmer for a few minutes before adding the almost done spaghetti and half the parmesan and tossing everything together with the help of a good amount of pasta water.

Mix until cheese, macaroni and Brussels sprouts are well combined. If it’s not creamy enough, add some of the macaroni and cheese sauce.

When everything is ready, you can serve delicious spaghetti with Brussels sprouts. Stir in the remaining basil and you’re ready to serve!
