What it really is is hard to describe, so I’ll throw in a few key words: crisp tortilla chips, fried eggs, avocado, salsa, rahin. Chilaques: Perfect for an elaborate brunch

Too much salsa and tortillas left? Then Chilaques, a spicy breakfast dish from Mexico, is perfect for that.

preparation

  1. Peel and chop the onion and garlic. Wash both in olive oil. Stir the tomato paste together briefly and then add the tomato paste. Add the spices and bring to a boil. Cover on medium-high for 15 minutes.

  2. While everything is toasting, preheat the oven to 180 degrees Celsius. Cut the tortilla strips into 5 cm wide strips. Cut on 3-4 times. Brush the strips with olive oil and bake in the oven for 10 minutes until crisp.

  3. Remove the pot with the sauce from the oven. Marinate the fried chips in the sauce. Now heat some oil in a large pan and add 4 eggs. Fry the fried eggs with a lid on medium heat for 6-7 minutes.

  4. Cut the radish into thin slices and the onion into strips. Cut the avocado in half, peel and dice it into thin slices.

  5. For each serving, place some of the tortilla chips that have come out of the sauce on a plate. Arrange onions, radishes and half an avocado on top of a fried egg. Season with salt and pepper. If you like, chop fresh coriander and sprinkle over the serving. Finished!
