Sesame toast by Tanja Grandits
Ingredients for the dough:
100 grams of flour
100 ml of water
1 pint of fresh yeast
Dough Ingredients:
200 ml of warm water
20 grams of fresh yeast
50 ml maple syrup
400 grams of flour
15 grams of salt
100 g butter cubes, room temperature
3 tbsp sesame
Preparation:
The dough is made from flour, water and yeast a day before. Cover and refrigerate overnight.
The next day, take the dough out of the refrigerator 1 hour before preparation.
Dissolve the yeast in the warm water with the maple syrup.
Knead the dough in flour, salt, oil and sesame. Add the flour beforehand and mix in the food processor or by hand
Beat for 8 minutes.
Cover the dough and leave it for 30 minutes. Knead the dough in between.
Grease a bread pan and roll the dough into it. Cover with a towel and leave to rise again for 15 minutes.
Cut lengthways with a sharp knife and leave for another 20 minutes.
Bake in the oven at 220 degrees for 15 minutes.
Then reduce the temperature to 190 degrees and bake the toast for 30 minutes.
Just before eating, break the sesame toast into pieces and toast lightly in the Novis toaster oven level 3.
