Prepare kidney bean meat
Ingredients for 4 servings:
For the beef:
400 g of red kidney beans, drained and washed
50 g fresh white bread
½ teaspoon of garlic powder
½ teaspoon of onion powder
½ teaspoon fine sea salt
1 large egg yolk
cayenne pepper generously
1-2 tablespoons of extra virgin olive oil
freshly ground black pepper
For the sauce:
400 g of chopped onions
½ teaspoon hot roasted paprika
½ teaspoon of sugar
2 tablespoons of extra virgin olive oil
2 tablespoons basil, plus for garnish (or any other herbs you have available).
- In a food processor, combine the kidney beans with the breadcrumbs, garlic and onion powder, salt, egg yolk and cayenne pepper. It should not be too soft, because the balls need a certain structure. Form the mixture into 12 small balls.
- Heat 1 tablespoon of the oil in a large nonstick skillet and cook the meatballs over low-medium heat, turning regularly, until lightly browned and heated through, 5-6 minutes. Add more oil if needed.
- Meanwhile, for the sauce, put the tomatoes, peppers, sugar and olive oil in a medium saucepan and melt gently. Beat, stirring regularly, until slightly thickened, 2 to 3 minutes. Season with salt and pepper and stir in the chopped basil.
- Add the meatballs to the sauce and cook for another 1-2 minutes. Add a little water if necessary to thin the sauce. Garnish with extra greens and serve with crusty bread.
